This miso dengaku is made with homemade additive-free miso! This time we used jade eggplant 😊.
It is one of the few native species born in Japan and has a beautiful jade green color.
The skin is soft, and when heated, produces a tender texture!
We fry it quickly in oil to finish it off 😌.
The native farm grows five main types of fixed eggplants, each with a different taste and appearance, which we hope you will enjoy when you come to our restaurant! 🍆✨
